Sweet Potato Croquettes – Perfect for little fingers!

Ingredients:

1 large sweet potato, grated.
Half a large courgette, grated
1 large carrot, grated
1 small red onion, finely chopped
1 egg (if you prefer not to use egg you can double the amount of cheese)
25g grated mature cheddar
1 tablespoon of baby rice
1 tablespoon of fresh chives

Method:

Pre-heat the oven to 180
Place all of the vegetables into a bowl and mix them together, when they are well mixed put them into a sieve and squeeze out any excess water.
Return the vegetables to a bowl and add all of the other ingredients.
Form small sausage shapes with the mixture, pop on a lined baking sheet and bake for 25 minutes.
These make an ideal finger food but can squashed up and spoon fed to younger babies
